Heirloom Tomato Fresh Mozzarella Cheese Avocado with Basil Salad

 

Heirloom tomatoes are better in general than other varieties and given a choice, I would choose an heirloom tomato time and again. Many people who otherwise don’t like tomatoes find that they absolutely love eating an heirloom tomato.

An heirloom tomato (also called heritage tomato in the UK) is an open-pollinated (non-hybrid) heirloom cultivar of the tomato. Their texture and vibrant flavor is amazing and has undoubtedly contributed to heirloom tomatoes becoming increasingly popular and more readily available in recent years.

This is a VERY simple, quick and healthy dish you can make for lunch or dinner that will not only pleasantly satisfy your hunger but keep your kitchen and house cool in the heat of the summer AND…. it’s ready in minutes! Enjoy!

INGREDIENTS:

  •  Heirloom tomatoes, sliced about 1/4′” thick or as preferred
  • Fresh mozzarella cheese, sliced approximately 1/4″ thick or as preferred
  • Fresh avocado, sliced approximately 1/8″ or as preferred
  • Fresh basil, leaves carefully chopped as not to bruise (optional)
  • Extra virgin olive oil
  • Balsamic wine vinegar (optional)
  • Pignoli “pine” nuts (optional)
  • Salt and pepper
DIRECTIONS and ASSEMBLY:
  1. Wash all of your produce (highly recommend using a natural, non-toxic fruit & vegetable wash spray to help remove germs and any other residue) and dry thoroughly.
  2. Slice the heirloom tomatoes, fresh mozzarella cheese and avocado as desired. As you slice; arrange slices on individual plates or on a larger serving dish, if you desire.
  3. Gently chop fresh basil and sprinkle over the heirloom tomatoes, fresh mozzarella and avocado as desired.
  4. Drizzle olive oil over each plate
  5. If using Balsamic wine vinegar then drizzle it over your dish.
  6. Sprinkle any pignoli or “pine” nuts over your dish, if desired
  7. Salt and pepper to taste and ENJOY this deliciously simple meal
