Baked Sweet Potato Fries

Serve these fries as an appetizer, or in place of regular french fries for a rather healthy side dish! These baked fries are low in fat, and loaded with a healthy dose of vitamin A.

  • Prep Time: 10 minutes
  • Cook Time: 25 minutes
  • Total Time: 35 minutes

Ingredients:

  • 1 pound sweet potatoes, peeled and sliced into 1/4 inch strips (about 2 large sweet potatoes)
  • 1 Tbsp canola oil
  • 1/2 tsp salt
  • 1/4 tsp ground red pepper

Preparation:

  1. Preheat the oven to 425°F.
  2. In a large bowl, combine the potatoes and canola oil. Sprinkle the salt and red pepper over the potatoes, and toss all ingredients together. Spread the potatoes in a single layer, on a baking sheet coated with cooking spray.
  3. Bake for 25-30 minutes, or until the fries are crisp.
