Serve these fries as an appetizer, or in place of regular french fries for a rather healthy side dish! These baked fries are low in fat, and loaded with a healthy dose of vitamin A.

Ingredients:
- 1 pound sweet potatoes, peeled and sliced into 1/4 inch strips (about 2 large sweet potatoes)
- 1 Tbsp canola oil
- 1/2 tsp salt
- 1/4 tsp ground red pepper
Preparation:
- Preheat the oven to 425°F.
- In a large bowl, combine the potatoes and canola oil. Sprinkle the salt and red pepper over the potatoes, and toss all ingredients together. Spread the potatoes in a single layer, on a baking sheet coated with cooking spray.
- Bake for 25-30 minutes, or until the fries are crisp.
