Lamb/Bison/Turkey Meatloaf

Serves 4-6

1-1½ pounds Lamb/Bison/Turkey or combo
1 egg, beaten
1 cup lowfat cottage cheese
2 teaspoons Dijon mustard
1 finely chopped onion
½ finely chopped red or green pepper
2 tbsp chia or flax seeds
½ cup oat bran
1½ teaspoons salt
1/2 teaspoon pepper
2 cloves crushed garlic


Topping: Optional
½ cup ketchup
3 Tablespoons rapadura or sucanat
2 teaspoons stone ground mustard
½ teaspoon chili powder

Mix the meatloaf ingredients together and bake in loaf pan for 1 hour at 350 degrees. Let the drippings drain underneath the loaf pan. Mix topping ingredients together if desired and spoon topping over loaf the last 10 minutes of baking. An added benefit from this meatloaf includes fiber and omega-3’s from the oat bran and chia or flax seeds. Very satisfying.
