Serves 4
Ingredients:
- 4 whole wheat tortillas
- 5 tablespoons olive oil or for a unique, healthy flavor try using coconut oil
- 8 ounces crumbled goat or feta cheese (Most feta cheese is now made with cow’s milk. Many people think goat or feta cheese made with goat milk is much more flavorful. It’s healthy and great to try, if you haven’t already.)
- 1 red onion, thinly sliced
- 4 tablespoon chopped fresh thyme
- 1/2 tablespoon butter
- 4 pears or apples, cored then sliced or chopped as preferred
- ground black pepper to taste
Directions:
- In a large skillet, heat the olive or coconut oil with 1/2 tablespoon of butter and a few sprigs of thyme. Mix the pears or apples into the skillet, and cook until the pears or apples are soft.
- While the pears or apples soften in the skillet; sprinkle equally on top of each of the four tortillas the goat or feta cheese, red onion, and thyme.
- Remove the pears or apples from the skillet and arrange equally on top of the tortilla pizzas. Add more olive or coconut oil, if necessary, to the skillet to cook the tortillas in.
- Place one tortilla “pizza” at a time in the skillet, cooking until the bottom of the tortilla is crisp and/or browned. You can place the cooked pizzas on a baking sheet and keep warm in a low temperature oven, if you like.
- Season with pepper, serve and enjoy
This is a great way to make personal-sized, thin crust, homemade pizzas…. the recipe here is delicious but you could also use a wide variety of other ingredients like various veggies from your garden or local Farmer’s Market to create an altogether different flavor of pizza, quickly and very easily. Try using pesto if you want a “sauce” as a base for your own tortilla pizza creation!
