Spinach Quiche

Prep Time:  20 minutes

Cook Time:  1 hour

Serves: 6

This is healthy and delicious… it warms up wonderfully for quick breakfasts through the work week. Try it with some nice salsa on the top or side for an extra little kick. Enjoy!






  • 8 eggs, beaten
  • 8 ounces fresh spinach
  • 16 ounces cottage cheese
  • 1 bunch green onion, finely chopped (use both green & white parts)
  • 1/2 cup red onion, finely chopped
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon macadamia oil
  • salt
  • freshly ground pepper


  1. Preheat oven to 325 degrees F.  Lightly spray a 9-inch baking dish with cooking spray.
  2. In a separate pan, saute garlic in oil for 1 minute, then add red onion, mushrooms, green onion and spinach into saute mixture. Cook until tender.
  3. Remove from heat. Stir in eggs and cottage cheese.  Add salt and pepper to taste. Pour mixture into prepared pan.
  4. Bake uncovered in oven for 1 hour, or until eggs are set.
